Hyatt Expands The Unbound Collection with Four New Hotels in the Americas

Hyatt Hotels Corporation announced that The Georgian in Santa Monica, California; Hotel 1000 in Seattle, Washington; Cayo Levantado Resort in the Dominican Republic; and The Clayfield in Niagara-on-the-Lake, Ontario, will join The Unbound Collection by Hyatt in 2026.

Hotel 1000, located near Seattle’s waterfront and within walking distance of Pike Place Market and the stadium district, features 120 guest rooms and suites with interiors that include oceanic hues, dark woods, and expansive windows offering views of Puget Sound and the city skyline. Public areas include Rosebay, a cocktail lounge, and All Water Seafood, a restaurant inspired by the city’s maritime heritage. The hotel has received a MICHELIN One Key distinction.

The Georgian, originally opened in 1933 on the Santa Monica waterfront, reopened in 2023 after a restoration. The 84-room property, including 28 suites, offers Mediterranean-inspired cuisine at Sirena, a steakhouse and piano bar called the Georgian Room, a library, boutique, and event venues. Features include in-suite mini bar cocktail buzzer systems.

Cayo Levantado Resort, located on a private island off the northern coast of the Dominican Republic, is expected to join The Unbound Collection by Hyatt in the summer. The resort has 218 suites, multiple restaurants and bars, daily activities, conservation initiatives, and 24-hour personal ambassadors. The Yubarta wellness zone includes a spa, personal training studio, and outdoor fitness areas, with four wellness pathways: Renew, Refresh, Relax, and Restore.

The Clayfield is scheduled to open in mid-summer 2026 in Niagara-on-the-Lake, Ontario, and is currently accepting reservations. The property is designed with influences from the region’s clay-rich soils and vineyards. The spa will offer treatments inspired by local elements, including clay-based body rituals and vinotherapy. The Clayfield will collaborate with Stratus Vineyards to provide curated tastings and guest experiences.

Additional openings for The Unbound Collection by Hyatt are planned for 2027 in the Americas, including The Digby in Savannah, Georgia, and Casa Duhau in Mendoza, Argentina.
