In Brief: The Clayfield has opened in Niagara-on-the-Lake, Ontario, as a wine-and-wellness hotel in The Unbound Collection by Hyatt.

Hyatt Hotels Corp. announced the opening of The Clayfield on Sept. 17, 2026. The hotel is located in Canadian wine country and is named for the area’s clay-rich landscape.
The project brings together David Feldberg, founder of Stratus Vineyards, and John Hawley and his family. Feldberg and Hawley met in 2019 while Hawley’s family was completing a new urban neighborhood with a village center now known as Clayfield Commons.
Montreal-based Sid Lee Architecture designed the hotel. Its design includes sculptural forms, curves, vertical timber elements, floor-to-ceiling windows, oak, stone and woven textiles. The building draws on the Niagara escarpment, vineyard rows, light, landscape and local craftsmanship.
Dining venues include The Rooftop at The Clayfield, a rooftop patio serving cocktails and small plates with vineyard views. The property’s restaurant, Terrain, is operated by The Ascari Group and led by Executive Chef Joel LaBute.
Terrain has an 80-seat main dining room, a 25-seat lobby bar and a Chef’s Table. Its menu focuses on Niagara produce and relationships with local growers and producers. The restaurant’s wine program includes Niagara wineries and small-lot producers.
The Clayfield also includes a full-service spa offering clay-based treatments, body rituals and vinotherapy. The spa’s services draw on Niagara’s mineral-rich clay landscape and wine culture.
For meetings and events, the hotel has more than 5,400 square feet of flexible space, including a ballroom with audiovisual capabilities. The space is intended for executive gatherings, private dinners, meetings and celebrations.
The Clayfield joins The Unbound Collection by Hyatt following additions including The Georgian in Santa Monica, California, and Hotel 1000 in Seattle. The collection has anticipated openings including The Digby in Savannah, Georgia, and Casa Duhau in Mendoza, Argentina, in 2027.
