This secret new French-Asian speakeasy just took over a prime Ossington space, Canada Reviews

30 June 20262 Mins Read

The revolving door of Toronto’s trendiest culinary strip continues to spin. For five years, 59 Ossington Ave. was home to Pastiche, a theatrical, velvet-curtained speakeasy known for its quirky ‘5:00 p.m. to who cares’ hours and blind tasting menus. After quietly closing its doors in 2024, the moody space sat empty for a stretch, leaving locals wondering what would take over the prime real estate.

Now, a new concept called Don’t Tell has officially moved in, keeping the address’s speakeasy roots alive while moving in a completely different culinary direction. Where Pastiche leaned into bohemian, Old World eccentricity, Don’t Tell is aiming for a modern, high-energy dining experience. The new space functions as a hybrid restaurant and lounge, mixing shareable plates with a program of live music and performances designed to cater to the late-night Ossington crowd.

Don’t Tell

The main draw here is a distinct French-Asian fusion menu that relies heavily on playful, high-low crossovers. Classic French pastry techniques are used to reframe traditional Asian profile dishes resulting in items like a beef tartare eclair ($20) with bone marrow mayo and Szechuan-dusted duck eclairs ($17), alongside a caviar cannoli ($14) filled with crème fraîche custard.

The rest of the menu includes an array of rich, decadent share plates. Diners will find things like foie gras takoyaki ($14) finished with gold leaf and blackberry caviar, a French dip served with a dashi cheese fondue ($14), and an uni carbonara ($37) made with fresh pasta and an uni sabayon. Even the salads get the maximalist treatment; their version of a Caesar ($20) features grilled pork belly, a bonito dressing and tempura anchovies.
For those looking for a full tour of the kitchen, they also run a multi-course Chef’s Tasting Menu for $120 per person.

Dont Tell 3 copy

The cocktail menu follows a similarly experimental path, highlighted by an uni martini that shakes up vodka, sake and Fino sherry. On the sweeter side, the dessert menu features an interactive Don’t Tell mousse ($34) that is designed to be finished tableside by the diner.

DON’T TELL is located at 59 Ossington Ave. and is open Wednesday through Sunday. Reservations can be made on OpenTable.
